Sun Basket Easy Sloppy Joes with pickled jalapenos and classic creamy coleslaw
One of the reasons that I like Sun Basket is their 20 minute meals to make the work week dinners a lot easier to prepare. Sun Basket packs in all of the ingredients needed, no need to go to the store and buy a big bottle of something you will probably only ever use for 1 recipe. Like all packaging places they sometimes mess up. More on that later.
When I opened the bag for this meal, I was delighted to see that they had chopped all the cabbage and shredded the carrots. This will definitely make my work a lot easier. Most of the ingredients are pre-measured and placed in a bag with all the ingredients together.

I usually start by reading over the instructions and making sure that I have everything I need.
This recipe arrived without the Sun Basket Cole Slaw Dressing. If you look closely in the top right corner, you will see that they sent me 2 Sloppy Joe sauce bases and no Cole Slaw dressing.
So here is where my cooking skills come in handy. Sun basket lists the ingredients in all of their sauces. I pulled together the ingredients, looked up recipes with those ingredients online, decided on quantities based on how much dressing I thought Sun Basket meant to send and then added them to the cabbage and carrot mixture. For this recipe, I used 1/4 C mayonnaise, 1 tsp apple cider vinegar, 1/4 tsp honey. I would have added a little less than 1/4 teaspoon of celery seed, if I had it. I didn't even have celery to add to the mixture. I tossed them together and added salt and pepper to taste and voila! Mmm, mmm good!
